Soya Chicken nibbles or drumsticks

  1. spray oven dish with non stick spray
  2. place thawed chicken in dish
  3. sprinkle over garlic granules
  4. pour over soya sauce
  5. pour over chilli sauce
  6. can grate frozen peeled ginger over it too
  7. add about 3 tbsp honey
  8. cook in oven for about 40min- 45 min; turn often and spoon sauce over chicken

Sweet & Sour sauce

  • 2 dessertspoon (dsp) sugar
  • 2 dsp malt vinegar
  • 1/2 tsp salt
  • 1 1/4 tsp white pepper (or black pepper)
  • 2 TBSP soy sauce
  • 2tsp tomato sauce
  1. Mix all ingredients in a saucepan
  2. add 8 Tbsp water
  3. bring to boil
  4. mix cornflour with a wee bit of water to make a paste
  5. add cornflower to boiling sauce
  6. stir quickly with a whisk to keep it smooth

Microwaved Rice

This is an easy way to make rice,we use basmati rice

  1. Measure rice into microwave container with lid
  2. add tsp chicken stock
  3. add drop of oil
  4. add double quantity of boiling water eg 1/2 cup rice; then 1 cup boiling water
Cover & Cook 10-13 minutes depending on amount

Soya Chicken & Rice- Auntie Kati's recipe

This can be done in the electric frying pan or in a large saucepan, need to keep an eye on it so it doesn't dry out.

  • 1/4 cup soy sauce
  • 1/2 tsp sesame oil
  • 1/4 tsp ginger
  • pinch of Five Spice
  • 1 1/2 Tablespoon brown sugar
  • 1tsp chicken stock
  • 1tsp malt vinegar
  • 1 cup water
  1. Put all ingredients in a pan
  2. Bring to boil
  3. Add chicken pieces, keep lid on
  4. lower heat a bit
  5. turn pieces until cooked
  6. takes about 3/4 hour
Serve with rice, steamed carrot and broccoli
